Mercurey Les Caraby Rouge
Caraby refers to the name Caras/Charas, meaning "heap of stones". The terrain is indeed stony, and at the top of the hill, a large "meurger", or pile of stones that have been removed and deposited at the edge of the plot, is still visible.
Wine Production
Cold pre-fermentation maceration for 10 days, pumping over and punching down with temperature control throughout fermentation. Aged in 228L barrels for 18 months with 22% new wood.
Tasting Notes
The nose is complex, with woody and fruity notes. On the palate, there is a very good balance between tannins and saline retro-olfaction, showing that its terroir is worthy of its reputation.

Pair with roast pork, stewed poultry, or soft and mature cheeses.
