The 2012 vintage was an atypical one in Chile, and the summer was one of the hottest in recent years. High temperatures accelerated grape ripening and moved the harvest up by two to three weeks in some areas. Special consideration was also made to manage vine foliage during the high temperatures in order to protect bunches from direct sunlight. The Sauvignon Blanc harvest began in late February, about a week early, with slightly higher yields due to the warmer weather. As a result, this year’s grapes are very high in quality with fruit that is nicely ripened with excellent sugar and phenol levels. The wines for this vintage show crisp, elegantly mature flavors and body with outstanding quality.

Tasting Notes

Pale yellow in color, with ripe citrus notes and juicy tropical aromas. Fresh acidity with bright lemon and grapefruit flavors which are ripe and refreshing on the palate. Crisp and delightful with a smooth, medium-body and elegant finish.

Food Pairing

Serve Root: 1 Sauvignon Blanc with grilled chicken, baked white fish or a spring pasta dish. A great match with Niçoise salad, grilled asparagus, deepfried calamari or curry dishes. A bright and refreshing accompaniment to soft cheeses like Brie, Camembert and goat cheese.
