Capogatto is the Tuscan name for the old method used to train and propogate the vines in the vineyards, a process technically known as "layering." Made from equal parts Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot harvested at the end of September, the wine is fermented concrete tanks and then aged in barriques for 18 months.
Tasting Notes
Deep purple in color, with aromas of black cherry fruit, licorice, violets, black pepper and cigar box. This powerfully rich wine is marked by superb balance among the silky tannins, weight, lively acidity and evolving finish.
Food Pairing
Pair with seasoned grilled game, pork or beef, as well as aged cheese.
