Capogatto is the Tuscan name for the old method used to reproduce the vines in the vineyards, a process technically known as "layering." Made from equal parts Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot harvested at the end of September, the wine is fermented concrete tanks and then aged in barriques for 18 months.
Tasting Notes
Deep purple in color, with aromas of black cherry fruit,licorice, violets, black pepper, and cigar box. This powerful wine is warm, juicy, and well-balanced with silky tannins and a long finish.

Pair with meat dishes (red meats and game), and seasoned cheese.
