CH by Chocapalha is an homage to the Swiss origins of the Tavares da Silva family. A classic, elegant and rich style of Arinto, this limited production wine is produced from single plots of the estate’s oldest vineyards.

Wine Production

After an intricate selection, whole cluster grapes are pressed via pneumatic press, followed by fermentation in neutral French oak barrels at low temperatures. The wine then stays in contact on the lees for 12 months. Before release, the wine ages for a minimum of 1 year in the bottle.

Tasting Notes

Very fresh and delicate nose with citric and floral notes. On the palate, the wine shows great texture and minerality, with excellent acidity and complexity.

Food Pairing

Because of the Arinto grape’s natural high acidity, this wine is fantastic for food pairing. The best pairings are richer seafood dishes such as Portuguese bacalhau (salt cod), scallops in citrus butter sauce, oysters, lobster or crab dishes. Japanese food, spicy food, curry and grilled vegetables are also wonderful pairing options.
