Wine Production
From manual harvesting and meticulous stem removal to production in a controlled atmosphere, every step is designed to protect the quality of the grapes. The must is floated to eliminate impurities prior to fermentation, and the process is carried out under a strictly reductive regime to preserve primary aromas and prevent oxidation. By producing its own food-grade nitrogen, the winery is able to inertize each phase of production, thereby reducing the need for sulfur and enhancing overall purity. Gentle clarification techniques are employed to maintain the wine's texture and varietal character.
About the Vineyard
Predominantly Viura grapes, sourced from vineyards in Rioja Alavesa at elevations between 360 - 630m. Soils with a loamy texture that tends to sandy loam, rich in silt. Bodegas Faustino practices sustainable viticulture with a strong emphasis on biodiversity and environmental stewardship. The winery adapts grape varieties to their ideal habitats and plants in high-altitude areas to enhance quality.
