One Day is more than just an elegant, pale pink rosé wine - it is a statement of intent. Sourced exclusively from organic and regeneratively farmed vineyards in the Côtes de Provence appellation, it’s designed to champion farmers who put soil health, biodiversity restoration, and carbon capture at the center of their universe. The philosophy is that one day, all vineyards will be farmed this way.
Wine Production
Night harvested followed by gentle direct pressing and partial liquid maceration (stabulation), before temperature controlled fermentation. The wines are protected with inert gas throughout the winemaking process. Vegan-friendly.
Tasting Notes
A pale pink rosé with a fine nose of small berries, red and blackcurrant, notes of fresh mint and clementine. The palate is elegant, with more juicy red fruits and flavors of pomegranate. A fresh finish makes this well-balanced wine an invitation to the scented fields of Provence.
Food Pairing
A great match for seafood, such as a roasted sea bass with extra virgin olive oil and Provençal herbs, or a classic clam linguine. It’s also a good partner for some spice, like a Thai beef salad. For dessert, consider a raspberry or cherry pannacotta.

About the Vineyard
This elegant rosé hails exclusively from regeneratively farmed vineyards within the so-called “golden triangle” nestled on the foothills between the Maures and Sainte-Baume mountains. Here, the convergence of maritime and continental influences creates exceptional terroir conditions, perfectly suited to producing rosés of the highest quality. Regenerative systems aim for natural balance, so vines can self-regulate growth and ripen more evenly. This maintains natural acidity better and, in tasting terms, offers brighter acidity, better structure, cleaner finishes, and more energy on the palate.
