Princesse Maudite Coteaux Bourguignon Chardonnay
A blend of Chardonnay grapes from various origins; this allows it to benefit from the northern wines’ freshness, minerality, and vigor; the Macon and Côte Chalonnaise wines’ fullness and roundness, and the Côte d’Or wines’ power and complexity.
Wine Production
The grapes are first sorted and then pressed when they arrive at the winery. The musts are settled and then vinified in thermo-regulated stainless steel vats using selected yeasts. The vinification temperature is between 16° and 18°C, allowing optimum extraction of the wine's aromatic potential. The wine is then matured in stainless steel vats on its lees for 6 to 8 months. Malolactic fermentation is complete, making the wine more supple.
Tasting Notes
The nose is fruity, with a lovely expression of ripe yellow fruit and a delicate floral note. It's elegantly woody, with subtle smoky notes. Fresh and round on the palate, this wine has a fine mineral character that gives this Chardonnay a very long finish. A racy and well-balanced wine.
Food Pairing
To be served simply as an aperitif or with a salad of avocados, poultry, a butter fish, onigiri, stuffed calamari, a dish of mussels, an omelette with bacon, pasta, or a good, lightly seasoned pizza.

About the Vineyard
Chardonnay grapes are sourced from the Côte de Beaune, Côte Chalonnaise and the north of the Mâconnais. Hand-picked from vineyards with south-east and south-facing slopes, at altitudes of between 250 and 600 meters, on soils made up of clay and marl with granitic touches.
