Toledana Gavi
La Toledana is a castle that was built in the first half of the 16th century, and now serves as a winery owned by the Martini family. It’s located in Gavi, the magic land for the production of Gavi , the most renowned white wine from Piedmont. Cortese has been grown for the production of Gavi at this site for over 180 years.
Wine Production
After the harvest, the grapes are destemmed, gently pressed, and the juice is fermented without skins in stainless steel tanks at a controlled temperature. It is then matured in stainless steel tanks and bottled just a few months after the harvest in order to preserve its freshness.
Tasting Notes
Bright straw yellow color with greenish reflections, a delicate nose with hints of fresh fruit and white flowers, citrus and bitter almond notes that are enriched by complexity and ageing. Dry and full bodied on the palate, the wine is pleasant, fully integrated, sophisticated and refined.
Food Pairing
La Toledana Gavi di Gavi can be served as an aperitif, as well as an accompaniment to the best fish dishes, spaghetti and pasta with light sauces, white meats, and goat cheeses.
