Chablis 1ER Cru Montee De Tonnerre
Harvested on the Brechain hill, where the vine slowly ripens, this Premier Cru perfectly combines the iodized character of the soils with the richness of a good exposure. It will be a great companion to fine fish, shellfish, white meat or goat's cheese.
Wine Production
Both grapes and must are brought in with long pneumatic pressing, followed by static settling. Alcoholic fermentation begins in stainless steel tanks. After 3 days, 35% of the juice is transferred into fine-grained barrels that are 1-2 years old, followed by malolactic fermentation and stirring of the lees for the part in oak barrels. Aged for 17 months on fine lees.
Tasting Notes
Beautiful pale gold color. Elegant aromas of pineapple and white flowers. Fresh and silky on the palate, with a roasted hazelnut finish.
Food Pairing
Pair with grilled or poached fish, sushi, sashimi but also asparagus and will also go well with goat cheese or French cheese such as Beaufort, Comté or Emmental.

About the Vineyard
Slightly set back from the Grands Crus vineyards, Montée de Tonnerre seems to be challenging the Climat right across from it, Blanchot. Its moderate slopes, exposed to the west, welcome the sun in the afternoon. The grapes ripen easily, especially since they are protected from the East winds. The shallow soil is underlain with Kimmeridgian marly limestone, and reveals veins of blue clay, which gives the wines both minerality and energy. Montée de Tonnerre covers approximately 42.5 hectares, including Chapelot, Côte de Bréchain and Pied d'Aloup.
