Wine Production

The hand picked fruit is partially crushed and chilled before gentle pressing of the free-run juice. Fermentation follows under cool temperatures to allow for high retention of the aromas and flavors. Once fermented, the wine rests on yeast lees for an extended period to build texture.

About the Vineyard

Eden Valley is regarded as one of Australia’s exemplary wine regions for producing world class, highly expressive, and long-lived riesling wines. The variation of sites across the region enhances Henschke's ability to blend and express both the cooler high-altitude characters along with northern sites of moderate altitude. To capture the ultimate expression of the season, the fruit is picked once perfectly ripe. After a gentle extractraction of the free-run juice, and the wine goes into cool fermentation in neutral vessels for dryness. Peggy’s Hill is Henschke's definitive riesling to encapsulate the greater Eden Valley region.
