This old vine wine is made from Falanghina, a grapevine cultivated in Molise by the ancient Sannites, who considered it one of the best. The vineyard where the grapes are grown faces south, with a clay soil that gives it a particular minerality and balance between acidity and body.

Wine Production

Before fermentation, the grapes are cooled to 2 ºC. degrees, remaining in contact with the skins for 24 hours and only the flower is slowly fermented at a low temperature. The wine is then aged in contact with the lees for about three months and bottled after filtration. The sulphur content of this wine is far below  the average of other organic wines.

Tasting Notes

Golden, straw yellow color with green reflections. Fresh, pleasant bouquet with hints of Spanish broom. Pleasant on the palate with a slightly bitter after-taste that recalls the pomegranate.

Food Pairing

 A wine to pair with every course, it is perfect with shellfish, non-fatty hors-d'oeuvres, starters and especially fish dishes.
