Made from 60% Malvasia Toscana and 40% Trebbiano Toscano harvested from various estate vineyards in Castellina in Chianti. After harvest, the grapes are crushed and fermented in small oak barrels (caratelli) where they are aged for four to five years.

Tasting Notes

Castellare's Vin Santo is a brilliant amber in color. The nose is clean with hints of vanilla, banana, and chocolate. The wine tends towards sweetness on the palate with optimal structure, rich flavors and an exceptional finish.

Food Pairing

Recommended on its own or with biscotti and fruit tarts.
