“With nearly a decade in bottle, this Ribera is aging well. Its flavors have taken on some dried fruit notes, the wine holding its freshness and youthful vibrancy while contrasting that with the serenity and integration that comes with age. While the tannins have mellowed, the texture is still firm.”
“Protos was a pioneer in Ribera del Duero, the first commercial winery to be built in the region back in 1927. It’s still a force, as this 2004 demonstrates: This is a ripe red with great structure and strength. Barnyard and leather notes mingle harmoniously with all its sweet black fruit, aged characters that might dupe you into thinking this is mature. The monumental tannins tell a different story: This is a wine in its youth.”
“This captures the aristocratic side of Ribera del Duero wine. It feels at once polished and on guard, ready to attack the next piece of meat with its velvet-gloved tannins. To understand how precise and elegant a Ribera can be, decant this tinto fino for the fresh, juicy impact of its cherry flavors and sweet spices.”
The 2005 Covento San Francisco is 90% Tempranillo and 10% Merlot with 50% of the Tempranillo vineyards dating from pre-phylloxera times. The wine was sourced from 46 different sites. Opaque purple-colored, it offers a superb bouquet of pain grille, pencil lead, spice box, saddle leather, and blackberry. Opulent, full-bodied, rich, and concentrated, the wine has terrific depth and enough structure to evolve for at least 6-8 years. This lengthy wine will come into its own by 2018 and drink well through 2035. Javier Garcia is owner/winemaker of this small estate. Garcia for several years was Peter Sisseck's right hand man at Hacienda Monasterio. The estate's vines range in age from 86-102 years.

Deeper in color, it also has a more expressive nose of tobacco, clove, black cherry and blackberry. With additional layering of fruit, this full-bodied, opulent wine also has an excellent integration of oak, tannin, and acidity leading to a long, pure finish.
