Thirty percent of the harvest is dried until December and then blended with the rest of the batch, which gives the wine a touch of Amarone's density and deep notes of dried berries, while keeping a lively brightness.
Recommended - Northern Selections - The Palazzo della Torre is a smooth and full-bodied mix of 70 percent Corvina Veronese, 25 percent Rondinella and 5 percent Sangiovese. About 70 percent of the grapes are harvested and vinified immediately; the remaining ones are dried for about two months....the final result is a deep ruby-red wine with a bouquet of red berries, raisins and plums. This wine is excellent accompanied by grilled or roasted vegetables or meats.
