A 100% Monastrell from 50+ year old vineyards. The winery uses traditional dry farmed viticulture with Organic goblet trained vines. Cultivation is done completely by hand, with minimal human intervention. Each grape is selected maticulously through hand harvesting.
About the Vineyard
Multiple vineyards situated between the Sierras of Salinas, Umbria and La Sima, with an altitude of 600 to 750 meters. Limy soil with little capacity to retain water, covered with stones forming a platform at the foot of the mountain, thus avoiding erosion.
Wine Production
Traditional viticulture with minimal intervention. Harvest takes place in October. Native yeasts, fermentation in vats, malolactical fermentation in steel pools and aging in a French barrel (used the previous year for Tarima Hill) for 6 months.
Tasting Notes
Cherry color with purple highlights. Flores de Tarima in your glass with hints of licorice and chocolate and a subtle depth of herbs and floral qualities. Young and expressive with a fruit forward attitude.
