The hands-off winemaking philosophy of gentle whole bunch press, wild yeast ferment, natural malolactic fermentation and zero filtration allows Neudorf to reflect the terroir in the truest sense. The warm days, cool nights and clay gravel sites of the Moutere Hills lend a thread of mineral acidity to balance the complex, richly textured and concentrated body.
