Cascina Lo Zoccolaio is dedicated to tradition. The grapes are treated with love and respect at every single phase of production from the vineyards to the cellar. Lo Zoccolaio goes by the following guidelines: no use of herbicides, the use of legumes as fertilizers, and always having respect for the rhythms of nature. The harvest is carried out rigorously by hand selecting only the best grapes.
About the Vineyard
This Dolcetto d'Alba comes from Lo Zoccolaio's own vineyards located Monforte d'Alba area. Ideal vineyard position (South-East) and the sand/limestone soil gives the wine a youthful fragrance, with a ruby and violet colour and a fresh and fruity perfume.
After the harvest, destalking, and soft pressing, the wine is fermented in stainless steel tanks. The dolcetto is typically bottled in spring, giving it a short time in stainless steel tanks. This process preserves the freshness of the wine. Everything is done with respect for tradition, and with the most modern methodologies and tools.
Full and bright red, with characteristic perfumes, slightly spiced, of plum and violet. Intense on the palate, and well balanced between freshness and tannins.
Best served with appetizers, pasta, vegetables and simple meat dishes.
