This 100% Chardonnay wine comes from our vineyards located in the Leyda Valley, 12 kilometers from the Pacific Ocean. Due to its proximity to the sea, the Leyda Valley is a unique site for winemaking. The cool climate in spring and summer, a result of the maritime influence and summer breezes, make this an extraordinary area for the cultivation of white grape varieties such as Sauvignon Blanc and Chardonnay.
About the Vineyard
This wine is made with grapes from El Granito vineyard, planted in different blocks with massal selection, clone 95 and 76, with different exposures: north-east, south-east and north-west. The grapes were hand harvested in 4 different picking moments, starting the 3rd week of March, respecting clonal’s characteristics.
This Chardonnay has a semireductive vinification, starting with whole cluster pressing at low bars. Then the juice is chilled down to 8º C and clarified up to 100-120 NTU with the use of pectolitic enzymes. The fermentation was made 100% in stainless steel tank to enhance the fruit profile and freshness of the final wine, managed at low temperatures (13,5-14,0°C) during 16 days. The wine was left on its lees for 6 months 100% in stainless steel tank, with batonnage regime in order to get roundness and volume in palate.
This wine is a pure example of a fruit driven and fresh Chardonnay showing the tipicity of the grape variety and the cool coastal climate. In nose it has ripe citrus fruit, with some herbal and salty notes. In palate it is fresh and fruit
concentrated, with juicy acidity, sweet texture that comes from the fruit.
Pair with lightly cooked seafood and buttery cheeses.
