This 100% Sauvignon Blanc comes from one of our vineyards located in the Leyda Valley, a mere 12 kilometers from the Pacific Ocean. Such proximity to the sea creates a truly unique winegrowing location. Ocean breezes and cool climate conditions throughout spring and summer make this an extraordinary area for cultivating white varieties such as Sauvignon Blanc, Chardonnay and Riesling.
About the Vineyard
This Single Vineyard Sauvignon Blanc comes from 100% Clone Davis 1 grapes, and is selected from two blocks that we call “Garuma,” the name of a typical bird spotted along Chile’s coast. With a southern orientation, this Sauvignon Blanc delights in a much cooler microclimate and therefore is the last of the variety to be harvested. The soil is of granitic origin, and these particular blocks possess calcium carbonate in their profile, responsible for the wine’s superb minerality.
The grapes were harvested by hand on four different occasions beginning in the third week of March with 21.8-22.8° Brix. We hand selected the grapebunches in the bodega to ensure fruit quality. Half were pressed as whole bunches and the other half was destemmed before a cold maceration press. We then clarified the wine using pectolytic enzymes at 100-120 NTU before fermenting 100% in stainless steel tanks at low temperatures (beginning at 13°C, ending at 16°C) for 18-20 days. The wine aged on its lees for six months in order to obtain a rounder structure and improve texture in mouth.
The Garuma Sauvignon Blanc is an excellent representation of Leyda’s terroir. Mineral and elegant with aromas of herbs, green chili and citric notes such as lime and pink grapefruit. In mouth, again herbal notes shine, with a creamy texture and great concentration accented by vibrant acidity and a persistent finish.
Pair with fresh seafood such as oysters, clams or sea urchins. It also works well with white fish cuts such as sashimi or carpaccio.
