These wines celebrate the symmetry of region and variety. From vineyards in the Eden Valley, in the rugged and undulating high country of the Barossa and from the cool, steep slopes of the picturesque Adelaide Hills. These wines honour the contribution that Wyndham Hill-Smith OBE (1909 - 1989) made to wine, sport and life in Australia.
Location of Vineyard
Established in 1979, Hill-Smith Estate wines are sourced from family owned vineyards located in the cool climate Eden Valley and Adelaide Hills of South Australia. At 400-600m above sea level, these sites are characterised by their cool, high elevation and granitic, mica schist soils. The long ripening periods here are perfect for flavour accumulation and intensity.
Celebrating the synergy of region and variety and a no-compromise attitude, grapes are selectively hand-picked and and kept cool before whole bunch pressing. Differing fruit ripeness, the use of large format oak and wild yeast fermentation adds an extra dimension of complexity and finesse to the wines. Extended lees contact and regular lees stirring further enhances palate structure to create fresh and textural wines.
