With the help of his students from the University of Viterbo, renowned winemaker Riccardo Cotarella discovered that Aleatico, a red grape variety introduced to Italy from Greece, thrives in the volcanic soil found in the Lake Bolsena region of northern Lazio. Very low yields and a special cold maceration technique are used to preserve and intensify this grape's extraordinary and unique aromas.
