El Enemigo
Chardonnay
Alejandro Vigil is a master of Chardonnay, as well as a man who likes to push boundaries, which is why this impressive white was made with a little flor, just like a Fino Sherry. Toasty, spicy, and salty, this is briney and refreshing with some honeyed notes.
Wine Production
Vinification: In french oak barrels of 500 lt. 35% new. Wild yeast, Max. temp. 18º C for 40 days
Aging: 9 months in french oak with veil. 500 lt barrels.
Tasting Notes
El Enemigo Chardonnay has bold oak, citrus, and lees aromas. The ripe lemon, apple, yeast, honey, and subtle oak flavors are complex and well-balanced. It is toasty, spicy, briny, and refreshing with a full body, creamy texture, and long finish.
Food Pairing
Pair El Enemigo Chardonnay with creamy cheeses like brie, summer crudités, fresh seafood, pesto chicken, or risotto.
