The Story

Founded by Dundalk-born Pearse Lyons, the Pearse Lyons Distillery at St. James was born out of a personal passion for brewing and distilling, an entrepreneurial spirit and a deep-rooted family connection with The Liberties.

Their boutique distillery features two unique copper stills, nestled in the sanctuary of the restored historic St. James’ Church. These stills produce a range of small-batch craft whiskeys which are aged in superior ex- bourbon casks.

The whiskey produced at the Pearse Lyons Distillery uses their own yeast cultivated in-house and is aged in top-quality barrels sourced from our sister distillery in Kentucky. Non-chill filtered and bottled at its natural colour, their whiskey is distilled with passion and inspired by tradition.

The Yeast
  • Yeast is the foundation for whiskey production, Pearse Lyons uses their own proprietary yeast strains that they cultivate. 
The Barley
  • Pearse Lyons only uses 100% Irish barley.
The Stills
  • Unique for the Irish Whiskey industry, they use a pair of Kentucky small-batch copper stills, and their unique design gives their Irish Whiskeys a special character. 
The Wood
  • They only use Bourbon barrels from their sister distillery - Town Branch in Lexington Kentucky. This allows them to use the freshest and best quality barrels. 
The Color
  • They only release their Whiskey at natural color.
