Germany is one of the most northerly wine regions in the world. Most vineyards exist only in the vicinity of a river, such as the Mosel and the Rhein, which help to moderate Germany's cool and marginal climate. The vineyards can also gain reflected warmth from the ‘darkness’ of the soil, which is one reason the blue slate of the Mosel region is known for such outstanding wines. Of course, the signature German grape of Riesling produces some of the most cherished, complex, and long-lived wines in the world.

Because of the marginality of climate, Germany has based its quality classification system on how ripe the grapes are at the time of harvest, such as Spätlese (grapes picked later) and Trockenbeerenauslese (grapes picked so late that the berries are ‘dried’).  Depending on the desired style of the winemaker, the profile of such wines can run from dry, to semi-sweet, and very sweet, balanced against the naturally high acidity of Riesling.
